Cacao loses most of its flavanols to heat. Roasting above 70°C, alkalising, and long conching each strip away more of what makes cacao worth eating.
We keep the temperature low and skip alkalisation entirely. The drops are lightly roasted, the bars and powder not at all, which is why these numbers look the way they do.
Sweetened with dates, coconut blossom sugar and honey. Never refined sugar.
