This is my go-to chocolate banana bread. I make it when there are overripe bananas on the counter and honestly just want something good in the oven. Use more chocolate than you think you need.
Wet ingredients
- 3 ripe bananas, mashed
- 120 ml plant milk
- 2 eggs
- 120 ml maple syrup
- 3–4 tbsp coconut sugar (or any sugar)
- 2 tbsp yogurt
- Dash of vanilla
Dry ingredients
- 200g oat flour
- 45g oats
- 1 tsp baking powder
- Pinch of baking soda
- Pinch of salt & cinnamon
- 100–150g Flava’Choc Chocolate Drops — plus extra to sprinkle on top
Method
Mix the wet ingredients first, then add the dry and stir well. Fold in the chocolate drops and keep some aside to sprinkle on top. I also like breaking a Flava’Choc 80% bar into rough chunks and throwing those in too. Into a loaf tin, extra chocolate on top, and 45–55 minutes at 185°C. You’ll know when it’s ready.
