Raw Cacao Powder vs. Regular Cocoa Powder

Raw cacao powder is made from unroasted, non-alkalized cacao beans, mechanically cold-pressed, which preserves most of the bean's natural flavanol content. Regular cocoa powder is usually made from roasted and often alkalized beans, processes that can destroy more than 90% of flavanols in some cases. The practical difference is both flavor and flavanol content.

How each one is made

Raw cacao powder starts from unroasted beans, mechanically cold-pressed to separate the fat (cacao butter) from the solids, which are then ground into powder, with no alkalization. Regular cocoa powder typically starts with roasted beans, often followed by alkalization (Dutch processing) to reduce acidity and darken the color. What processing does to flavanol content

Research on bean roasting shows epicatechin loss becomes significant once bean temperature exceeds 70°C. Our beans never cross that threshold, and core bean temperature averages 45 to 50°C throughout processing. Alkalization is the larger factor overall, in some cases reducing flavanol content by more than 90%. Taste and appearance differences

Raw cacao powder is lighter brown, more acidic and fruity, and slightly bitter. Regular alkalized cocoa powder is darker, smoother, and milder, the familiar "Dutch cocoa" used in classic baking.

Which one to choose

If the goal is flavanol intake toward the EU-authorised benefit (200mg cocoa flavanols daily, contributing to normal blood flow), raw, non-alkalized cacao powder is the more reliable source. If the goal is purely flavor for baking, some recipes still favor the milder taste of Dutch-process cocoa.
